Lemon Matcha Protein Balls Recipe

These protein balls are the perfect snack full of protein and good fats to keep you satisfied for longer. They are the best pre-workout snack, the Matcha gives you a natural kick.


Not to mention with less than 1/2 a date per ball, these protein balls are low sugar too...Winning!


With only 6 ingredients, meal prep friendly and no bake these will be your new go to snack.

Matcha Protein Balls Ingredients Flat Lay

Lemon Matcha Bliss Balls

^Vegan, vegetarian, soy-free, dairy-free, high protein, refined sugar free, low sugar

Portion: 10 balls

Prep Time: 10 min

Ingredients

1 1/2 cup Cashews

1 cup Coconut (flaked or shredded whichever you prefer)

2 Tbsp Vanilla Vegan Protein Powder (I use The Healthy Chef)

2 tsp Matcha powder

Juice from 1 medium Lemon

3-4 Medjool Dates


Optional Toppings

2 Tbsp Hemp Seeds

Directions

  1. Soak the Medjool Dates in boiling water (optional step to help soften the dates)

  2. Place the Cashews and Coconut into a food processor and pulse into small chunks

  3. Add in the Protein and Matcha powder and pulse to combine, then add the Medjool Dates and slowly stream in the Lemon juice (you may not need all the juice depending on the size of your lemon).

  4. Continue to blend until it starts sticking together when you press it between your fingertips.

  5. If it isn't sticking together steam in a little water and you'll see it come together

  6. Grab a tablespoon amount and roll into balls (you can actually make them any size you like).

  7. Optional: Roll the balls in hemp seeds

  8. Store them in the fridge or freezer*


Notes

*I store mine in the freezer as they last longer and that way I can alternative between different flavours. Just remember to allow them to thaw for a bit for eating them.
