Caramel Banana Protein Granola Clusters

Store bought granola's can be full of hidden sugars and expensive. It really takes no time at all to make it yourself and at a fraction of the price.


You can enjoy this granola with your favourite milk, yogurt, on top of a smoothie bowl or straight out of the jar. It is super tasty and filling


Caramel Banana Protein Granola Cluster Recipe

^Vegan, soy-free, dairy-free, high protein, refined sugar free

Portion: 10 serving

Prep Time: 5 min

Cook Time: 20 min

Ingredients

2 cups rolled oats

1/2 cup puffed quinoa

1/2 cup raw almonds (chopped)

1/4 vanilla vegan protein powder (I use The Healthy Chef)

Pinch of salt (optional)


1 large banana (mashed)

1/4 cup peanut butter

1 Tbls honey


1 Salted Caramel Blue Dinosaur Protein Bar (chopped) - you can substitute this for 1/4 of dried fruit or your favourite protein bar


Directions

  1. Preheat oven to 160c (320f)

  2. Mix together dry ingredients (excluding the protein bar)

  3. Combine wet ingredients in a separate bowl then add to the dry ingredients

  4. Mix until the dry ingredients are coated

  5. Spread out on a baking sheet and bake in the oven for 20min or until golden*

  6. Allow to cool

  7. Once cooled stir through the chopped Blue Dinosaur Protein Bar (or dried fruit)

  8. Transfer to an airtight jar

Notes

*Try not to stir it too much so you get nice big clusters at the end
