Banana Bread Protein Bars

Homemade banana bread is one of my go to healthy baking snacks. But it isn't the easiest to eat on the go.
This is where my Banana Bread Bars come in. They taste just like banana bread and are super convenient to eat on the go.
With only 7 ingredients, no bake and taste like dessert, these protein bars are a winner.

Banana Bread Protein Bars
^Vegan, soy-free, dairy-free, high protein, refined sugar free, no bake
Portion: 10 bars
Prep Time: 20 min
Set Time: 1-2 hours (can speed this up by setting in the freezer)
Ingredients
3 dried banana*
3 medjool dates
1 cup rolled oats
1 cup raw cashews
2 Tbsp vanilla vegan protein powder (I use The Healthy Chef)
1 tsp cinnamon
1 Tbls coconut oil
Optional toppings
2-3 melted Dark Chocolate Squares (I use 85% Lindt)
Directions
Soak the dried banana and medjool dates in hot water to soften (optional)
Add the oats, cashews, protein (if using) and cinnamon to a food processor (or blender) and pulse
Add in soaked banana, medjool dates and coconut oil
Continue to blend until it starts sticking together when you press it between your fingertips.
If it isn't sticking together steam in a little water and you'll see it come together
Firmly press into a lined 9 x 9 tin and place into the fridge to set for 1-2 hours (this makes it easier to cut into bars)
Remove from the tin and cut into 10 bars
Optional: Drizzle with melted chocolate
Store them in the fridge or freezer**
Notes
*make sure you use dried banana not banana chips, I bought mine from The Source Bulk Foods
**I store mine in the freezer as they last longer. Just remember to allow them to thaw for a bit for eating them.
