Almond and Goji Berry Oat Bars stacked

Have an overripe banana but not enough to make banana bread??? If so, these homemade baked oat bars are perfect.


One bowl, no special equipment required and only 8 ingredients.


Enjoy this healthy snack on the go or with a cup of tea (matches perfectly with Chai tea).

Almond and Goji Berry Oat Bar Recipe

^Vegan, soy-free, dairy-free, high protein, refined sugar free, low sugar, high fibre

Portion: 7 bars

Prep Time: 5 min

Cook Time: 30-35 min

Ingredients

1 cup Rolled Oats (gluten free if desired)

1/2 cup Almonds (roughly chopped)

1 tsp Cinnamon

2 tsp ground Flaxseeds

1/4 cup Goji Berries


1 Banana (overripe*)

3 Tbls Tahini

1 Tbls Maple Syrup**

Optional Topping

2-3 melted Dark Chocolate Squares (I use 85% Lindt)


Directions

  1. Preheat oven to 170°C (340°F)

  2. Mash the banana and add the rest of the wet ingredients, stir to combine

  3. Add the dry ingredients and mix well

  4. Spoon into a lined loaf tin and smooth out the top

  5. Bake in the oven for 30-35 minutes until golden brown

  6. Allow to cool completely before slicing into bars

  7. Optional: Drizzle with melted Dark Chocolate

  8. Store in the fridge

Notes

*The recipe still works even if your banana isn't too ripe. Having an overripe banana just makes it easier to combine and makes it slightly sweeter


**You can add 2-3 Tbls of Maple Syrup if you prefer things a little sweeter.
